Great summer recipes to cool you off on a hot, summer day!
G2 or Gatorade Enhanced Jello Shots
Ingredients
1 Pkg. of any flavored Jell-O
1 c. of G2 or Gatorade (or any electrolyte replacement drink)
Prepare Jell-O as you would normally, but instead of adding a cup of cold water to the boiling Jell-O liquid...add 1 cup of G2 or Gatorade. These are great treats for ball tournaments, for those who work outside in the heat all day, for endurance athletes, or for kids!
Fruit Smoothie
1 c. of Strawberries (I prefer strawberries or raspberries)
1/2 c. of Blueberries (frozen or fresh)
1-6 oz. cup of yogurt (any flavor)
1 Tb. of milk
1 scoop of Whey Protein Powder
1/4 c. of slivered almonds
Directions:
Blend together all the ingredients, but the almonds. After blended well, sprinkle almonds on top and enjoy!

Creamy Avocado and White Bean Wrap
(can't wait to try this one!!)
2 tablespoons cider vinegar
1 tablespoon canola oil
2 teaspoons finely chopped canned chipotle chile in adobo sauce, (see Note)
1/4 teaspoon salt
2 cups shredded red cabbage
1 medium carrot, shredded
1/4 cup chopped fresh cilantro
1 15-ounce can white beans, rinsed
1 ripe avocado
1/2 cup shredded sharp Cheddar cheese
2 tablespoons minced red onion
4 8- to 10-inch whole-wheat wraps, or tortillas
Directions:
Whisk vinegar, oil, chipotle chile and salt in a medium bowl. Add cabbage, carrot and cilantro; toss to combine.
Mash beans and avocado in another medium bowl with a potato masher or fork. Stir in cheese and onion.
To assemble the wraps, spread about 1/2 cup of the bean-avocado mixture onto a wrap (or tortilla) and top with about 2/3 cup of the cabbage-carrot slaw. Roll up. Repeat with remaining ingredients. Cut the wraps in half to serve, if desired.
